Stephanie’s inspiration is Anton Mosimann, her head chef at Dorchester Hotel; to this day she praises him as “an inspiration and a gentleman”. Stephanie says that Anton has great confidence in his staff and this is something that she endeavours to emulate. She takes pride in encouraging her Chefs to excel in all areas and the Head Chef at Clocktower, Jerome Gaudre, became a “Disciple of Escoffier”. The Head Chef of the Conference and Banqueting Kitchen, Stephen Ashburn, was also voted “Banqueting Chef of the Year” at the Craft Guild of Chefs Awards 2008.
At Rudding Park, Stephanie promotes the use of local produce on the menu at Clocktower with a menu that changes daily where the principal ingredient in each dish travels no more than 75 miles.
Stephanie not only enjoys cooking good-quality food, she also enjoys fine dining: When questioned about how she would spend her last £100 she responded “£99 on a fine meal and £1 on a lottery ticket!”
